Widely distributed in the plant kingdom, quercetin is the most abundant of the flavonoid molecules. It is found in many often-consumed foods, including apples, onions, teas, berries, vegetables of the cabbage family, seeds, and nuts. Quercetin is thought to be an essential component of the activity of many plants.
All flavonoid molecules are similar in their chemical structure; however, small changes in these molecules dramatically change their solubility, activity, and affinity for certain tissues. It appears quercetin is poorly absorbed; however, slightly altering the molecule significantly increases the molecule's water solubility and absorption. Quercetone contains Thorne's water-soluble quercetin.**
Quercetin appears to have many beneficial effects on human health, including cardiovascular protection, as well as protection of the gastrointestinal tract.* A number of quercetin's effects appear to be due to its antioxidant activity.* Quercetin scavenges free radicals and inhibits oxidation of LDL cholesterol.* By itself, and paired with vitamin C, quercetin can reduce the incidence of oxidative damage to skin and nerves caused by glutathione depletion.*
